I'm still working through my hidden stash of chocolate and found these two bars hidden in the bottom of the pile. I cannot believe I've gone this long without eating them. After reviewing the Green & Black's Peanut (that I loved), I went on a Green & Black's tasting splurge and I must have forgotten these two bars somehow. Green & Black's makes so many great flavors of chocolate bars.  They have Mint, Almond, Cherry, Ginger etc... I'm sure I'll taste all of them at some point.



Both bars are certified organic and they both use Trinitario cocoa beans. Trinitario cocoa beans are known for their complex behaviors and these are rarer and more expensive than the Forasteros beans, which make up most of the world's chocolate (since they are heartier and less disease prone). The Trinitario beans only account for 5% of world cocoa production. The Forasteros bean, on the other hand, accounts for 80% of the world's cocoa production.  Trinitario cocoa beans are mostly used in dark chocolate and I'm guessing that is because of their more complex flavor and higher price.



Both bars also use the same great Green & Black's packaging with a rich brown colored wrapper with black worked into it and beautiful and elegant gold lettering. I love how each bar is wrapped in gold foil which makes this bar seem so rich and elegant. It is definitely more upscale than a plainly wrapped Hershey bar for instance. I also love the mold they use for Green & Black's products with the leaves and the G&B logo (see photo below), this is a well put together product.



My overwhelming favorite of the two bars is the 70% dark chocolate bar. It has a wonderful fruity flavor. I thought it had a great citrus flavor and my first thought was lemon and grapefruit. This bar is the perfect dark chocolate combination for me. Not bitter and not sweet. I thought the flavor was almost perfect. It has a super nice melt that was clean and smooth and VERY enjoyable. If I were in the mood for dark chocolate and wanted something easy to find in my local stores, this is the bar I'd likely pick.



The 85% dark chocolate bar was also good, but I thought the flavors were very muted, when compared to the flavors of the 70% bar. On top of that I though the taste was bitter and raw, but I'm not a huge dark chocolate fan to begin with. There was a very nice vanilla taste in this bar and I could also taste some the same citrus flavor but like I said, it was heavily muted. This bar was rich with a smooth melt. I think this bar has 59% cocoa butter so it's no wonder it melted nice and smoothly. I think high cocoa butter content is normal for an 85% dark chocolate bar. I don't think I'd buy this bar again but I'm glad I tried it.

In the picture above you can see the 70% bar on top of the 85% bar. The difference in color is amazing when we are only talking about a 15% difference between the two of them. I really like Green & Black's products and presentation and I'm looking forward to trying more of their products. The Green & Black's Peanut has become a favorite of ours and that one bar has convinced me to try more of their products.  It's so nice to be able to buy an "upscale bar" without needing to order from the internet or go to the specialty store.  It's super that Green and Black's is so luxurious, but is only two aisles over from the toilet paper and paper towels at our Wal-Mart.
